Gujiya Recipe is a popular North Indian sweet dish, especially eaten in festivals like Holi and Diwali. It is a deep-fried or baked pastry filled with mixtures of khoya/mawa (reduced milk solid), nuts, and aromatic spices such as green cardamom powder and fennel powder (Saunf Powder). It is golden in color.

Preparation of Gujiya Recipe-Making Processes By Baking and Frying

The preparation of this recipe has two parts. 1. Ingredients and 2. Cooking process (Baking and Frying)

Ingredients

For Gujiya Dough

  1. All-purpose flour/Maida-2 Cup
  2. Ghee-3 Tablespoon
  3. Salt-1/2 Teaspoon
  4. Rose Water-1 Tablespoon
  5. Water as per requirement

For Gujiya Stuffing

  1. Mawa/Koya-1 Cup
  2. Ghee-2 Tablespoon
  3. Semolina-3/4 Cup
  4. Cashew Nuts (Chopped)-1/2 Cup
  5. Almonds (Chopped)-1/2 Cup
  6. Sugar Powder-1 Cup
  7. Green Cardamom Powder-1/2 Tablespoon
  8. Oil for deep fry

Cooking Process of Gujiya Recipe-Making Processes By Baking and Frying

Making Dough

  1. Take a bowl, put all-purpose flour and a small amount of salt.
  2. In a small pan, heat the ghee. Pour the ghee into the bowl. Mix them well with flour.
  3. Add water as per the requirement to make of dough.
  4. Knead them until they become slightly tight.
  5. Then cover the bowl with a clean moist cloth and keep them aside for 25-30 minutes.

Stuff Making

  1. Take a Kadhai, heat it on medium flame, and add mawa/khoya. Roast them until they become light brown colour and clear out the mawa/koya from kadhai.
  2. Now pour the needy amount of ghee into the same kadhai at medium heat.
  3. Add semolina and roast well with ghee.
  4. Add almond (chopped) and Cashew nuts and mix them well.
  5. Now, add the roasted mawa/khoya into the kadhai and mix them properly.
  6. Put out the mixture from the kadhai and keep them cool.
  7. After cooling, mix sugar powder and green cardamom powder.

Shaping the Gujiya

  1. Take the dough and make a round shape of them.
  2. Fill the stuff and cover them.
  3. Take a gujiya mold and put the dough into them.

Baking Method of Gujiya

  1. Take a baking tray and keep the gujiya on them.
  2. Gentilly applies ghee over the gujiya by using of brush.
  3. Heat the oven to 200 degrees Celsius and put the gujiya baking tray in the oven.
  4. Bake the Gujiya for 25-30 minutes, until the color becomes golden.
  5. Once the baking process is complete then keep them cool.
  6. Once they become cool, place them in jam packed jar or box.

Frying Method of Gujiya

Take a kadhai and pour oil or ghee on it.
Put a small piece of dough in the kadhai for the checking of the heating level. If the dough frying in the kadhai, then it is ready.
How many gujiya can be fried at the same time, depends on the size of gujiya and kadhai. Keep the flame at medium level.
Check properly the frying gujiya and turn over the other side.
Fry them till they become golden in color.
Now, pick out the gujiya from the kadhai and drain them on tissue paper.
When it completely cools down then store them in an air-packed box or jar.

Serving Suggestions

It might be eaten like any other sweets. You can pair them with Rabri.
