Cooking Process of Kathal Ki Sabji or Jackfruit Curry

Ingredients of Kathal Ki Sabji(Quantities)

For Marination
  1. Kathal or Jackfruit– 500 GmKathal Ki Sabji
  2. Curd- 1 Cup
  3. Chilli Powder- 1 Teaspoon
  4. Turmeric Powder- 1/2 Teaspoon
  5. Kasuri Methi- 2 Teaspoon
  6. Ginger Paste- 1 Teaspoon
  7. Garlic Paste- 1 TeaSpoon
  8. Salt- 1/2 Teaspoon
  9. Gram Masala Powder- 1 Teaspoon
  10. Mustard Oil – 4 Tablespoons
For Curry
  1. Mustard Oil- 4 Tablespoons
  2. Bay Leaves- 4 Pieces
  3. Cinnamon- 2 Pieces( 1-1 Inches)
  4. Cardamom- 8 Pieces
  5. Cloves- 14 Pieces
  6. Cumin Seed- 2 Teaspoon
  7. Green Chilli- 3-4 Pieces
  8. Onion (chopped)- 4 Pieces(Mid-Size)
  9. Tomato- 1 Piece( Medium-Size)
  10. Ginger Paste- 1 Teaspoon
  11. Garlic Paste- 1 Teaspoon
  12. Turmeric Powder- 1 Teaspoon
  13. Red Chilli Powder- 2 Teaspoon
  14. Kashmiri Red Chilli Powder- 1 Teaspoon
  15. Coriander Powder- 2 Teaspoon
  16. Cumin Powder- 1 Teaspoon
  17. Meat Masala Powder- 1 Teaspoon
  18. Salt- As required
  19. Water- As per requirement
  20. Garam Masala Powder- 1/2 Teaspoon
  21. Green Coriander Leaves- For the dressing

Step-By-Step Cooking Process of Kathal Ki Sabji or Jackfruit Vegetables Curry

Marination of Kathal or Jackfruit
  1. Take a large bowl, and pour the required amount of water into the bowl. Add 1 tablespoon of salt to the water and stir well. Now add cutted Kathal or Jackfruit pieces( because it prevents to discoloring of Kathal) and keep them aside.
  2. Now take another bowl, add 1 cup of curd, 1 teaspoon of red chilli powder, half a teaspoon of turmeric powder, 2 teaspoons of kasuri methi, 1 teaspoon of ginger paste, 1 teaspoon of garlic paste, 1 teaspoon of Garam masala powder and 2 tablespoons of mustard oil.
  3. Mix all ingredients well and keep them aside to marinate for 30 minutes.
Frying of marinated Kathal or Jackfruit
  1. Take a frying pan, and pour 4 tablespoons of oil. When the oil is heated add marinated Kathal or Jackfruit into the frying pan. Keep the flame at medium level.
  2. Fry them well until Kathal or Jackfruit is cooked.
Making of Curry or Gravy
  1. Heat up the stove at medium flame, and add 4 tablespoons of mustard oil. When the oil becomes hot add bay leaf, cinnamon, 8 cardamom, cloves, and 2 teaspoons of cumin seed. Fry them until they leave an aromatic smell.
  2. Now add green chilli, chopped onion, 1 teaspoon of ginger paste, and 1 teaspoon of garlic paste.
  3. Saute it until the onion becomes golden brown
  4. Keep the flame at a low level, add 1 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, and salt(to taste).
  5. Fry all ingredients until it leaves aromatic. small.
  6. Now add chopped tomatoes to the kadhai and cook it well until it turns soft and mushy.
  7. Add fried Kathal or Jackfruit into the gravy and mix it well.
  8. Pour the required amount of water.
  9. Add Meat Masala to the gravy and over the kadhai for 15-20 minutes for cooking and well mix with the gravy. Keep the flame at medium level.
  10. Add 1/2 teaspoon of garam masala powder and fresh coriander leaves and mix nicely. leave it for 2 minutes.
  11. Here your Kathal ki Sajbi is ready. You can take this meal with roti, naan or rice.
