Dal Baati Churma Recipe is one of the best Rajasthani food recipes. This is a 3-in-1 recipe like Dal, Baati, and Churma. Dal (Lentil), five different types of lentils may be used. Baati is a hard oval in shape and is made of fine wheat flour, semolina, ghee, fennel seeds, carom seeds, and besan. It would be baked or fried. While Churma stands for rugged powder of Baati.

The origin of Dal Baati Churma goes back to Bappa Rawal time when soldiers made balls with the help of wheat flour and buried them in the sand.
Dal Baati Churma
When they came back from war, it baked from the heat of sand. So, it was the wartime food. Later by the evolution, there was an evolution of this recipe and it combined with Dal and Churma and became Dal Baati Churma. It is a close ally of the Bihari food dish- Litti Chokha.

Ingredients

For Dal
  1. Chana Dal- 1/4 Cup
  2. Masoor Dal-1/4 Cup
  3. Urad Dal- 1/4 Cup
  4. Green Dal- 1/4 Cup
  5. Toor Dal- 1/4 Cup
  6. Water- As per requirement
  7. Salt- As per requirement
  8. Turmeric Powder- 1 Teaspoon
  9. Ghee- 3.5 Tablespoon
  10. Cumin Seeds- 1 Teaspoon
  11. Red Chilli- 2 to 3 Pics
  12. Garlic(Chopped)- 1 Tablespoon
  13. Ginger(Chopped)- 1 Tablespoon
  14. Green Chilli(Chopped)- 1 to 2 Pics
  15. Asafoetida- 1/2 Teaspoon
  16. Onion- 1 Pic
  17. Tomato- 1 Pic
  18. Kashmiri Red Chilli Powder- 2 Teaspoon
  19. Coriander Powder- 1 Tablespoon
  20. Fresh Coriander leaves(Chopped)- As per requirement
For Baati
  1. Wheat Flour- 4 Cups
  2. Semolina-1/2 Cups
  3. Baking Soda- 1/2 Teaspoon
  4. Carom Seeds- 1 Teaspoon(Crushed)
  5. Salt- As per requirement
  6. Ghee- 4 to 5 Tablespoon( Dough) and as per the requirement for Dipping
  7. Water- 1.5 Cups
For Churma
  1. Baati for rugged powder- 6 to 7 Pics
  2. Ghee- 1 Tablespoon
  3. Cashew(Chopped)- 1 Tablespoon
  4. Almonds(Chopped)- 1 Tablespoon
  5. Cardamom Powder- 1/2 Teaspoon
  6. Sugar Powder- 3 Tablespoon

Cooking Process of Dal Baati Churma Recipe

Making of Dal
  1. First of all, mix all dal and wash them properly.
  2. Now, take a pressure cooker keep 4 cups of water in it, and put mixed dal in it. Let it cook for 3 whistles. Once the dal is ready, aside the pressure cooker from the stove.
  3. Take a Kadhai, and pour ghee on them. Once the ghee becomes heated add clove, cumin seeds, green chillies, and asafoetida to the ghee. keep flame on medium level.
  4. Once all spices are fried well, add ginger paste and garlic paste to the kadhai.
  5. Add chopped onion to kadhai and fry them well until they become brown.
  6. Add tomatoes, coriander powder, turmeric powder, Kashmiri chilli powder, and garam masala. Mix all ingredients well and cook them on medium flame.
  7. Now, pour the dal into the kadhai and leave it for 3-4 minutes on medium flame. Now your Dal is ready.
Making of Baatis
  1. Take a bow, add wheat flour, semolina, Baking soda, Carom seeds, ghee, and salt(as per requirement). mix them well add some amount of water and knead it as dough.
  2. Now divide the dough into equal portions and make them round shape.
  3. Flatten the round-shaped dough with the help of your thumb.
  4. Take a kadhai, and pour water into them at high flame. After the water becomes hot, add all Baatis to the kadhai for 20-25 minutes.
  5. Use a Pan, and keep ghee in the pan. when ghee gets heated then add Baatis into the pan for fry till it turns golden brown.
  6. Now your Baatis are ready. keep them aside.
Making of Churma
  1. Take a bowl and rugged 6-7 Baatis into it with the help of a hand or mixer.
  2. Add chopped Cashews, chopped Almonds, cardamom powder and sugar powder.
  3. Mix all ingredients well.
  4. Now your Churma is ready.
Serving of Dal Baati Churma Recipe
  1. Take a Thali, Keep Baatis, and on it
  2. Use two bowls one for Dal and the second one for Churma.
  3. Keep Sprinkle Onion and pickles in the Thali.
