Ingredients of Kathal Ki Sabji(Quantities)
For Marination
- Kathal or Jackfruit– 500 Gm
- Curd- 1 Cup
- Chilli Powder- 1 Teaspoon
- Turmeric Powder- 1/2 Teaspoon
- Kasuri Methi- 2 Teaspoon
- Ginger Paste- 1 Teaspoon
- Garlic Paste- 1 TeaSpoon
- Salt- 1/2 Teaspoon
- Gram Masala Powder- 1 Teaspoon
- Mustard Oil – 4 Tablespoons
For Curry
- Mustard Oil- 4 Tablespoons
- Bay Leaves- 4 Pieces
- Cinnamon- 2 Pieces( 1-1 Inches)
- Cardamom- 8 Pieces
- Cloves- 14 Pieces
- Cumin Seed- 2 Teaspoon
- Green Chilli- 3-4 Pieces
- Onion (chopped)- 4 Pieces(Mid-Size)
- Tomato- 1 Piece( Medium-Size)
- Ginger Paste- 1 Teaspoon
- Garlic Paste- 1 Teaspoon
- Turmeric Powder- 1 Teaspoon
- Red Chilli Powder- 2 Teaspoon
- Kashmiri Red Chilli Powder- 1 Teaspoon
- Coriander Powder- 2 Teaspoon
- Cumin Powder- 1 Teaspoon
- Meat Masala Powder- 1 Teaspoon

- Water- As per requirement

Step-By-Step Cooking Process of Kathal Ki Sabji or Jackfruit Vegetables Curry
Marination of Kathal or Jackfruit
- Take a large bowl, and pour the required amount of water into the bowl. Add 1 tablespoon of salt to the water and stir well. Now add cutted Kathal or Jackfruit pieces( because it prevents to discoloring of Kathal) and keep them aside.
- Now take another bowl, add 1 cup of curd, 1 teaspoon of red chilli powder, half a teaspoon of turmeric powder, 2 teaspoons of kasuri methi, 1 teaspoon of ginger paste, 1 teaspoon of garlic paste, 1 teaspoon of Garam masala powder and 2 tablespoons of mustard oil.
- Mix all ingredients well and keep them aside to marinate for 30 minutes.
Frying of marinated Kathal or Jackfruit
- Take a frying pan, and pour 4 tablespoons of oil. When the oil is heated add marinated Kathal or Jackfruit into the frying pan. Keep the flame at medium level.
- Fry them well until Kathal or Jackfruit is cooked.
Making of Curry or Gravy
- Heat up the stove at medium flame, and add 4 tablespoons of mustard oil. When the oil becomes hot add bay leaf, cinnamon, 8 cardamom, cloves, and 2 teaspoons of cumin seed. Fry them until they leave an aromatic smell.
- Now add green chilli, chopped onion, 1 teaspoon of ginger paste, and 1 teaspoon of garlic paste.
- Saute it until the onion becomes golden brown
- Keep the flame at a low level, add 1 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of cumin powder, and salt(to taste).
- Fry all ingredients until it leaves aromatic. small.
- Now add chopped tomatoes to the kadhai and cook it well until it turns soft and mushy.
- Add fried Kathal or Jackfruit into the gravy and mix it well.
- Pour the required amount of water.
- Add Meat Masala to the gravy and over the kadhai for 15-20 minutes for cooking and well mix with the gravy. Keep the flame at medium level.
- Add 1/2 teaspoon of garam masala powder and fresh coriander leaves and mix nicely. leave it for 2 minutes.
- Here your Kathal ki Sajbi is ready. You can take this meal with roti, naan or rice.
